What is your favorite solar cooked dish to have in the spring?

With spring on the horizon and brighter days ahead, SCI supporter Maria shares more of her favorite solar cooking recipes. In her previous blog, Maria shared a delicious and easy-to-follow recipe for solar baked chicken. In this edition, Maria offers recipes to her favorite sides - solar cooked polenta and sauteed squash/kale.

Solar-cooked sautéed squash and kale with fresh vegetables

Solar Cooked Polenta

1 cup dried polenta

4 cups water

1 teaspoon salt

1 T olive oil

 

1. Add all ingredients to a covered roasting pan.

2. Place in the solar cooker for 4 hours.

 


Healthy sautéed squash and kale prepared in a solar cooker

Sauteed Squash/Kale

3 yellow summer squash, sliced

½ onion, chopped

1 t salt, ¼ t pepper

4-6 cups chopped fresh kale

3 T blue cheese (optional)

 

1. Combine all ingredients in a solar cooker.

2. Leave in the sun for about 4 hours (10-2).
